The base is fermented Red Savina chillies, with a smaller amount of the extremely hot Yellow Primo Reaper, a hybrid of Carolina Reaper and Yellow 7 Pot. To balance the heat and the flavour in the preparation they use quince juice, dried marjoram from their own growing, and honey from a family apiary.
Red Savina and quince juice gave the sauce its name: quince is the only fruit in the ingredients, and fragrant enough to be sensed behind the heat.
On the heat
3 out of 5. The honey is what makes it usable in Asian cooking — the sweetness of the honey keeps the heat where it can be eaten.
What it is for
Anything served warm, especially meat dishes. This is a sauce that is not afraid of more complicated recipes.
