Full description
Sage grows on dry, stony slopes, and the nectar the bees bring from it is strongly aromatic. The honey is darker than acacia, thick and sweet, with a gentle bitterness that sets it apart.
In the kitchen
A spoon of sage honey in ginger and cinnamon tea is their most common way to use it. It also works with baked apples, young cheese and pork, where the sage aroma makes sense.
Crystallisation
It crystallises into medium-coarse crystals and is not hard when it does. To liquefy it, warm the jar in lukewarm water — not above 40 °C.
